What does co-fermentation mean in coffee?
Co-fermentation is a process in which coffee cherries are fermented together with other natural ingredients – such as whole fruits or flowers .
The aim is to allow the natural microbiology of the coffee cherry to interact with the enzymes, sugars, and aromas of the additional ingredients.
The result is a coffee with a complex aroma profile, vibrant acidity and exceptional sweetness , which shows its full range especially in light roasts .
Osmotic dehydration using whole fruits or flowers
In this process, the freshly harvested coffee cherries are fermented together with whole fruits – such as apricot, orange or pineapple – or flowers such as jasmine or coffee blossoms .
Through osmosis, the fruits and coffee cherries exchange water, sugar, and aromatic compounds.
This results in a coffee with natural sweetness , notes of tropical fruits, honey and floral accents , which elegantly reflects the diversity of the Colombian terroir .
Carbonic Maceration
Carbonic maceration – originally known from winemaking – is another important process.
Here, the coffee cherries are fermented in a closed tank under a CO₂ atmosphere.
This controlled environment slows down fermentation and allows for precise, clean, and fruit-forward flavor profiles .
In combination with light roast, coffees with a clear structure, lively acidity and silky mouthfeel are created – perfect for filter preparations and sensory lovers.
