Which brewing method for which coffee?

Specialty Coffee adapts to different brewing methods. Here's a quick guide to which coffees in our range work especially well with each method:

V60 / Pour-Over
Brings out the floral, clean side. Try Wush Wush (jasmine, mint) or Azahar (coffee blossom, honey sweetness).
Chemex
Clean cup with a bit more body. Works well with Apricot OD (sweet, ripe) or Spice Cosmic (orange blossom, red berries).
French Press
More body, less acidity focus. Try Golden Papayo (chocolate, cacao nibs) or Pacamara Natural (dark chocolate).
Filter Machine
Works with all of them, especially approachable with Honey Castillo (honey, tangerine, cocoa).

Frequently Asked Questions about Filter Coffee

What's the difference between filter coffee and espresso?

Filter coffee is brewed with slowly flowing hot water through a paper or permanent filter. Extraction takes several minutes and produces a clean, light cup with clear aromatic notes. Espresso is extracted under pressure in 25–30 seconds and is more concentrated and creamier.

Which brewing method is best for getting into Specialty Coffee?

The French Press is a great method to start with: no filter paper, no special equipment, and it's forgiving with small grind size inaccuracies. If you want clearer and more differentiated cups, the V60 or another pour-over system is worth trying.

How long does Specialty Coffee stay fresh?

We recommend using whole beans within 4–6 weeks of the roast date, and ground coffee within 1–2 weeks. Store beans dark, dry and airtight — not in the fridge.

What's the difference between washed and co-fermented filter coffee?

In the washed process, the fruit pulp is removed right after harvest, the coffee ferments in water and is then washed clean. The result is a clear, transparent cup that puts the varietal and altitude in the foreground. In co-fermentation, additional elements are deliberately introduced during fermentation — at Garza Coffee for example apricot or coffee blossom — which add layers of aroma to the coffee.

When are these coffees roasted and shipped?

We roast on Mondays. Each coffee gets at least six days of degassing before it's shipped, so you receive it fresh and ready to brew. Shipping confirmation with tracking comes by email.
