The coffee from the El Desarrollo cooperative comes from Huila, a region in Colombia where 51 women-owned farms join forces to create a blend of three coffee varieties: Caturra, Castillo, and Colombia . In an industry dominated by men, I wanted to pay special attention to projects like this.
I roast this coffee both as a filter coffee and espresso . When brewed as a cappuccino, its almond and vanilla notes come through in a very pleasant and delicate way. To fully develop the floral and fruity notes, it's best brewed as a filter coffee.
