
DECAF Castillo
La Cristalina is a 19-hectare family farm with over 100 years of coffee-growing tradition . It is owned by the Grajales family, whose roots run deep in the Colombian coffee artisanal trade. After Guillermo Grajales ' death in 2015, the farm was passed on to his sons , Alberto and Germán . Today, María Grajales , the fifth generation of the family, continues the cultivation and, starting in 2015, began introducing new processing methods , such as natural processing.
Careful fermentation and drying
After fermentation, the coffee is dried in special drying tunnels, whose curtains are opened during the day to allow optimal air circulation in all directions. The beans are agitated eight times a day to accelerate and evenly dry the beans. Once the ideal residual moisture content is reached, the beans are stored in the afternoon when the heat is less intense—a method that ensures quality and consistency.
Sugarcane Decaf – Naturally decaffeinated with ethyl acetate
For our decaffeinated coffees, we use the so-called indirect solvent process with ethyl acetate from sugar cane – a natural and gentle method that preserves the flavor.
First, the coffee beans are soaked in near-boiling water for several hours to extract caffeine, oils, and flavors . The water is then transferred to a separate tank and mixed with ethyl acetate . This selectively binds the caffeine, which is then removed by subsequent heating. The beans are then returned to the liquid to reabsorb the natural flavors and oils .
The result is a decaffeinated specialty coffee that is not only long-lasting but also aromatic – ideal for anyone who wants to enjoy full flavor without caffeine.
