Funky IPA Blend: Espresso with Hop Character – Bellavista Espresso & Pink Bourbon IPA
The only espresso in our range that tastes of hops. Funky IPA Blend combines our Bellavista Espresso (Castillo Washed from Caldas, Finca Bellavista by Alejandro Gil) with Edwin Noreña's Pink Bourbon IPA (Campo Hermoso, Circasia, Quindío), which is fermented at the farm with IPA hops and IPA yeast. In the cup: a chocolatey base, orange and lemon notes on top, and a clear hop finish that persists even through milk.

Preparation
Espresso roast. Portafilter or automatic machine. In a Flat White and a Cappuccino, the hop character carries through the milk; as an Iced Coffee, the citrus note becomes even clearer.
For Iced Coffee: pull a double espresso directly over ice; do not cool beforehand. This preserves the citrus notes.

Pink Bourbon IPA – The Hop Component by Edwin Noreña
Funky IPA Blend is an attempt to bring a filter coffee from the filter shelf into the espresso machine. Edwin Noreña's Pink Bourbon IPA is processed at Finca Campo Hermoso in two fermentations: 96 hours of carbonic maceration of the whole cherries under CO₂, then 72 hours with IPA yeast and C4 hops. The hop character develops in the cherry, not through an addition after roasting. As a filter coffee, the result is precise and citrus-focused. However, as a pure espresso, it would be a coffee for very few people.
Bellavista Espresso – The Chocolatey Base by Alejandro Gil
Hence the blend. Alejandro Gil's Bellavista Espresso, a Castillo Washed from Caldas with notes of cocoa, orange, and vanilla, gives the blend body and a chocolatey base. The hops sit on top of this, instead of standing alone in the cup. What remains is an espresso with a vibrant citrus top note and a finish that is not usually found in coffee. For anyone who likes distinctive, fruit-forward flavors and is looking for something that doesn't taste like a standard blend.

Does Funky IPA Blend really taste of hops?
Yes, and that's the whole point of this coffee. The hop character comes from the processing of the Pink Bourbon IPA: the whole coffee cherries ferment at Edwin Noreña's farm under CO₂ together with IPA yeast and C4 hops, and the bean absorbs the aromas in a controlled manner. Nothing is added after roasting. In the cup, this manifests as a malty sweetness, citrus notes, and a clear hop finish. Anyone who has ever tasted an IPA will recognize it immediately.
How does Funky IPA Blend differ from Pink Bourbon IPA?
Pink Bourbon IPA is a pure filter coffee: the Pink Bourbon variety from Edwin Noreña (Campo Hermoso, Quindío), honey processed and fermented with IPA hops, designed for V60, Aeropress, or Origami. Funky IPA Blend is an espresso blend, in which Pink Bourbon IPA is only ONE component: combined with Bellavista Espresso (Castillo Washed from Caldas, Gil family) it creates a cocoa-based foundation with hop and citrus notes. In short: you drink Pink Bourbon IPA black as a filter coffee, and Funky IPA Blend pure as an espresso or with milk in a Flat White.
Why a blend instead of Pink Bourbon IPA as a pure espresso?
Pink Bourbon IPA alone as an espresso is very acidic and hop-forward. The profile is exciting, but it dominates the cup and doesn't work as an everyday coffee. In the blend, Bellavista Espresso provides the foundation: Castillo Washed from Caldas, with cocoa, orange, and vanilla, a round structure, and enough body for milk drinks. The hop character then recedes from a leading role to a top note. The result is balanced enough for everyday use and still clearly recognizable as an IPA coffee.
Does Funky IPA Blend work as an Iced Coffee?
Very well, that's one of its best uses. When cold, the citrus notes and vibrant acidity become even more pronounced, and the hop finish is refreshing rather than heavy. Pull the double espresso directly over ice, rather than letting it cool beforehand: this preserves the aromatics. With cold milk as an Iced Flat White, it also works well; in that case, the cocoa-based foundation of the Bellavista Espresso remains in the foreground, and the hops come through in the finish.
